Oil without obvious defects (but with signs of fermentations that are surely from the
fact that it is not filtered). The positive profile corresponds to a quality oil.

Medium green-ripe fruity profile. In the mouth it is spicy and sweet similar and evident, with
a perceptible bitterness without being annoying, and a slight astringency in the mouth. Secondary scents
vegetable-like, with clear connotations of cut grass, as well as hints of green walnut and
of almonds, which characterize the sweetness in the mouth. The whole is a smooth, sweet oil,
with a spicy tip.
